Welcome back to the Brewhouse! This month Chris from the Tosche Station staff and Book Wars Pod joins us to craft a disaster Holiday Special beer utilizing Picobrew’s Model C system and Freestyle PicoPak Crafter. If you want to brew along with us, the recipe is below!

You Know it When You See It Holiday Special Saison

Characteristics: 8.1% ABV | 25 IBU | 29 SRM

Base Recipe: Saison

Grains:

  • 28 oz. Pilsner
  • 8 oz. Wheat Malt
  • 24 oz. Vienna Malt
  • 3 oz. Crystal 120
  • 20 oz. Two-Row Pale
  • 3 oz. Chocolate Malt

Hops:

  • .2 oz. Summit as bittering
  • .2 oz. Amarillo as bittering
  • .1 oz. Saaz as flavor
  • .2 oz. Cascade as flavor
  • .2 oz. Saaz as aroma

Dry Hops:

  • .3 oz Simcoe

Dry Hops Additions*

  • Cinnamon
  • Nutmeg
  • Clove
  • Ginger

*Throw the additions into a mesh dry hopper. Toss the dry hopper in with the dry hops three days after fermentation begins.

Yub Nub Freedom Pale Ale

Characteristics: 6.4% ABV | 35 IBU | 10 SRM

Base Recipe: American Pale Ale

Grains:

  • 60 oz. Amreican Two-Row Pale
  • 4 oz. Crystal 60L
  • 6.5 oz. Rye

Hops:

  • .6 oz. Summit as bittering
  • .2 oz. Cascade as flavor
  • .3 oz. Amarillo as aroma
  • .2 oz. Simcoe as aroma

Note: Picobrew will ship this PicoPak with a packet of American ale yeast, but Dave suggests tracking down a packet of wild yeast from your local homebrew shop to use instead to give this beer a little more of a farmhouse saison vibe.

With Kristen out on vacation and Brian’s family in town, we had to push our regular recording off a couple weeks but don’t fret, we’ve got a little intermediary episode where Brian is reworking the Sinjir’s Rath IPA and working on a themed Northeast style hazy IPA called the Hazy Hullstripper.
